Black Bean Hummus

This is great for dipping with pretzels or chips, but our favorite use is in our veggie quesadillas. You can add more spice if you like, our kids rebel against spicy foods.

Ingredients

  • 1 clove garlic

  • 1 (15 ounce) can black beans; drain and reserve liquid

  • 2 Tbsp reserved liquid

  • 2 tablespoons lemon juice

  • 1 1/2 tablespoons tahini

  • 3/4 teaspoon ground cumin

  • 1/2 teaspoon salt

  • 1/4 teaspoon paprika

  • 1/2 tsp taco seasoning (we like Penzey's Taco Seasoning)

Directions

  1. Drain black beans and keep the liquid (you will need at least 2 Tbsp)

  2. Add all of the ingredients to a food processor (we use the ninja bullet): beans, garlic, reserved bean liquid, lemon juice, tahini, cumin, salt, and taco seasoning

  3. Process until smooth

  4. Add any additional liquid or seasoning as needed

Tips

If you forget to reserve the black bean draining liquid you can substitute water but it will not be as flavorful so be sure to try the recipe again sometime with the saved liquid before you make a decision on whether or not you like this recipe.
