Hail to the Kale Salad

We had a salad like this when visiting Washington DC. When we got home, we did our best to replicate the ingredients.


  • 1 cup Quinoa

  • 1 package frozen edamame 

  • Large bunch of kale (Lacinato),

  • 1 cup shredded carrots or 1 large carrot

  • 1 Avocado

  • 1 Apple (Fuji/Gala),

  • Handful of Raisins

  • Several Candied Pecans (or regular pecans)

  • Carrot Ginger Dressing of choice


  • Cook quinoa according to directions and allow to cool

  • Microwave/heat the edamame according to directions

  • Wash kale and chop. Be careful to rinse the leaves to remove dirt and grit.

  • Peel and chop the carrot if not using shredded carrots

  • Peel and dice the avacado

  • Dice the apple

  • Combine the fruits and veggies into separate or one large bowl

  • Toss with dressing

  • Top with nuts
