We had a salad like this when visiting Washington DC. When we got home, we did our best to replicate the ingredients.
1 cup Quinoa
1 package frozen edamame
Large bunch of kale (Lacinato),
1 cup shredded carrots or 1 large carrot
1 Apple (Fuji/Gala),
Handful of Raisins
Several Candied Pecans (or regular pecans)
Carrot Ginger Dressing of choice
Cook quinoa according to directions and allow to cool
Microwave/heat the edamame according to directions
Wash kale and chop. Be careful to rinse the leaves to remove dirt and grit.
Peel and chop the carrot if not using shredded carrots
Peel and dice the avacado
Dice the apple
Combine the fruits and veggies into separate or one large bowl
Toss with dressing
Top with nuts
