Lentil Tacos

Lentils take on the taco seasoning and the texture is close to meat. This is a family favorite and comes together quite easily. This can be eaten as a salad or in shells or tortillas. Your choice!

Ingredients

  • 1 1/2 cups dry brown lentils

  • 1 small yellow onion

  • 2 cloves garlic

  • 1 bell pepper

  • 2 to 3 Tbsp taco seasoning

  • 1 tsp salt

  • 1 pkg corn tortillas (unless having it as a salad, then use greens of your choice)

  • 1 can sliced black olives

  • 2 small avocados

Directions

  1. Sort and rinse the lentils. Cook the lentils according to directions, it takes about 20 minutes. They should be soft but not mushy. Drain the lentils.

  2. While the lentils are cooking, dice the onion, mince the garlic and chop the pepper and cook them with pam spray in a large skillet over medium heat until tender.

  3. Once the pepper and onion are tender, add the the taco seasoning and then stir in the lentils. You may need to add a few tablespoons or up to 1/4 cup of water to get the right texture. Stir for about 5 minutes until everything is coated in seasoning. Then add salt to taste.

  4. Now the mixture is ready to be scooped on top of greens or into a shell or tortilla.

  5. Add topping like corn, salsa, avacados, black onions, or guacamole
