This is not the healthiest item on our recipe list, but it is worth it. The silken tofu provides a thick, creamy base with lots of protein.
1 box silken tofu
1 Tsp vanilla extract
1 Tbsp maple syrup (can substitute agave)
2 cups chocolate chips
Blend tofu, syrup and vanilla in food processor (we use a ninja bullet, the largest container) until smooth
Melt chocolate chips in microwave slowly
Add the chocolate and process until smooth
Frost brownies when they are cool
Try to let the tofu reach room temperature, or mix the tofu with the melted chocolate immediately after pouring it in or the chocolate can start to harden before it fully mixes. It still tastes great but may have a grainy texture or appearance.
