The inspiration for these pancakes was from a hearty meal at Jeannie's Great Maine Breakfast in Bar Harbor, Maine. She served up vegan pancakes as large as a plate covered in warm, fresh, homemade applesauce and topped in walnuts. We tried several different combinations to recreate her masterpiece in our own kitchen.
Ingredients
1 1/2 c whole wheat flour
3/4 c oat flour*
1 tsp salt
1 Tbsp ground flax seed
3 tsp baking powder
2 tsp cinnamon
1/2 tsp nutmeg (can be omitted)
2 Tbsp pumpkin purée**
2 + cups milk to desired consistency
Directions
Mix ingredients together
Bake on a griddle
Tips
*Oat flour can be made by putting rolled oats in the food processor until finely ground. It takes just about 1c up rolled oats to make 3/4 cup oat flour
**You can substitute coconut oil for pumpkin puree if needed
