Zucchini Chocolate Chip Cookies

This time of year we find ourselves with so many zucchini we don't know what to do with them. We love this healthy cookie recipe that's quick and easy.

Ingredients

1 cup shredded zucchini, drained

2 1/4 cups rolled oats, divided

1 tsp baking powder

1/2 tsp cinnamon

1/4 tsp salt

1/4 cup peanut butter

1 cup mashed ripe banana (~2 small bananas)

1 tsp vanilla extract

1/2 cup chocolate chips

Directions

Preheat oven to 350F

Shred zucchini and squeeze excess water out with a kitchen cloth or paper towel 

Combine 1 cup rolled oats, baking powder, cinnamon and salt in a food processor and blend until smooth

Add shredded zucchini, peanut butter,  mashed  banana, and vanilla extract to the food processor and blend until nearly smooth

Stir in 1 1/4 cup oats and chocolate chips

Spoon into 20-24 cookies on a lined cookie sheet and bake for 13-15 minutes

Let cool for 10 minutes 

Tips

If it seems a little liquidy, add a few more oats
