Veggie Quesadillas

We usually switch between bell pepper based quesadillas or zucchini and yellow squash based quesadillas depending on what we have in the refrigerator. This recipe does not call for cheese, but this certainly doesn't taste bad with a little quesadilla or mexican cheese.


  • Large flour tortillas

  • Black Bean Hummus (see recipe)

  • Your choice of vegetables, we like: either 1 yellow squash and 1 zucchini or 1 green, 1 yellow, 1 red, 1 orange bell pepper, and 1 onion

  • Additional toppings like: avocado, black olives


  1. Prepare the black bean hummus if not already done

  2. Saute vegetables of your choice in a fry pan with pan spray, vegetable broth, or water. Sprinkle with salt, pepper or seasonings of your choice.

  3. On a fry pan or quesadilla maker, layer tortilla, spread with black bean hummus, add vegetables and additional toppings of your choice and place the second tortilla.

  4. Cook until browned on each side.
